Just earth, animal, and hand. Indulgence is a Form of Health A glass of wine, a piece of aged Gruyère, a drizzle of honey — these are not guilty pleasures. They are the markers of a life well lived, rich in flavor and balance. Seasons Should Guide Us Just as orchards bloom, ripen, and rest, so too should our eating. Strawberries in spring, peaches in summer, apples in autumn, citrus in winter. Food tastes best when it honors time and place. Simplicity Over Restriction. We do not count, subtract, or punish.
